The San Bartolomeo Family Farm was founded in the 90’s and produces organic eggs, chickens, turkeys, and organic extra virgin olive oil.
Silvio Marsan’s rural adventure began in 1996 producing only organic eggs following other farms seen in France. In particular, the Poulet de Bresse where each bird has 107-150 square feet of natural feed, fresh grass, and the ability to move in the open air.
The main objective was to set up the company in an innovative way and at the same time recover the best of agriculture, or more precisely the traditional farming systems developed with a careful study of the first excellent results achieved with the production of organic eggs.
The philosophy of the San Bartolomeo Family Farm is to make animals live in the best possible conditions, in order to obtain a product of the highest quality.
In 2017 we decided to create a new reality, Polletti San Bartolomeo, with the intention of bringing a product to the table that was little known in Italy at the time: the wing of the chicken.
A small reality, but at the same time familiar, as part of the menu recalls old habits: the rotisserie chicken.
Polletti’s menu ranges from chicken cooked on a spit, seasoned only with pink Himalayan salt to a wide selection of fried chicken with homemade breading and sauces. We like to accompany our food with Ritual Lab’s craft beers (a brewery in Lazio, Formello) and a selection of local natural wines that embrace our basic philosophy: from the land to the table.
